Madeleines fresh from the oven…


Just baked a whole bunch of mini- madeleines for mini- sassy to snack on after school today. I can’t believe I used to fork over my hard-earned money to buy this really easy- to- make treat!!!
If your kids like madeleines, get yourself a mould ( or two) and get them to help you make it.
I adapted a recipe from the Le Cordon Bleu at Home cookbook (basically put in less butter and added more lemon zest). I also forgo fancy gadgets like electric mixers and piping bag. I imagine French mamans didn’t have those either when this recipe was invented:-)

Madeleines de Commercy ( Le Cordon Bleu at Home)

250 g. sugar
175 g. Butter, softened
4 eggs
60 ml milk
360 g. flour
Grated zest of 1 lemon
10 g. Baking powder
A few drops of vanilla essence

Softened butter and flour for Madeleine moulds

Thoroughly brush the Madeleine moulds with softened butter. Dust with flour, then invert the mould to tap out excess.
Combine the sugar, and eggs in a bowl and beat with whisk or electric beater until pale yellow and creamy.
*** I’ve tried this recipe whisked by hand and by electric beater and can’t tell the difference , so I just whisk by hand to keep it simple.

Add the zest, flour, baking powder and vanilla and beat until blended. Beat in softened butter and then milk. Set aside for 15 minutes.

Preheat oven to 200C ( 400F) mark 6.

Fit the piping bag with the medium plain tube and fill with madeleine batter. Pipe the batter into the moulds, filling each indentation to the rim.
*** I don’t own a piping bag, so I just spooned the batter into the mould. Worked fine.

Bake the Madeleines for 12-15 minutes , until golden ( mine were a little too brown at 12 minutes, so I baked the succeeding batches at 10 minutes).
Unmould immediately onto a wire rack and leave to cool completely.
( Madeleines can be stored up to a week in an airtight container).

Yummy served with a cup of tea or dipped in chocolate or served with poached fruit and some vanilla custard for dessert.
